Instructions

Slice onion and place in bowl. Add boiling water to the bowl - toss and let soak for 15 mins. Drain.
In a large saucepan gently heat water and vinegar then dissolve sugar and salt - add spices.
Pack onions into two pint jars and add the liquid.
Let stand for 2-3 hours on the counter - then refridgerate for up to two weeks.

Notes

Substitute pickling spice with 1/2 tsp. cumin seeds.
Can add sliced jalepeno or chili in with the onions.
